After expelling the oil, there is a small amount of the segments from the seeds nuts or coconuts which needs to be filtered out of the oil otherwise the oil will become very quickly rancid and unusable. There are two types of coconut oil - virgin and refined. Virgin coconut oil has the coconut-y flavor and the refined coconut oil does not. I use both.
